let it snow, let it snow, let it snow!

Snow days are the best days for baking and listening to music. I’m stuck home in New Jersey, and were bracing ourselves for 18 to 24 inches. The only way to survive the family confinement (as if Christmas Eve and Christmas weren’t enough), blast my favorite records and bake goodies.

Oven Baked Eggplant Chips ( any sliceable vegetable works, I prefer eggplants) – they’re really good and healthy!

  • slice THIN THIN pieces of eggplant
  • lay them out on a paper towel, and with another towel squeeze the shit out of them (get the water out)
  • put them on a baking sheet, drizzle it with olive oil and season as desired (I use garlic powder, salt, and pepper)
  • bake 450 and cook as desired (personally, I burn the shit out of ’em

Grilled Cheese is the best snow day food, and I stumbledupon the coolest thing ever: Grilled Cheese Academy

  • Go have a snowball fight first
  • Then pick one of these and pair it with your favorite soup!

My family and I are sweet-ed out after Christmas, so I’m sticking with light, savory warm dishes today.
